Cereals have been, are, and probably will remain the staple of the nutrition of the whole planet. All the known types of cereals appear in the diet on the European continent. The development of dishes from cereals moved from roasted grains towards cooked dishes, such as: fermentative infusion, soups, gruel, to baked dished such as pancakes, bread, cakes and pastry of varying shapes. In addition to the utilitarian function – as the main ingredient of a number of dishes – cereals also had an important cultural-semantic meaning in all peasant cultures. Its basic premise was the faith of people that by mandatory consumption of cereal dishes at certain times important for a person and the community they will ensure good harvest of this most important type of food and, consequently, further prosperity and continuity of their family.
